I'd say /dev/sda7:/ or /dev/fd0:/ using whatever resolution order
you use for any other name clashes.

# mount /dev/foo /mnt
# cd /mnt
# demon &
# pivot_root . /old
# exec chroot . whatever

wouldn't demon then keep / busy ?
