I've thought about this before too.

You *should* be able to do this. Just configure it the same way you
would with a ppp driver, except instead of ppp0 and ppp1, use eth0 and eth1.

Let us (and me, i'm interested) in knowing.

Also, if you're really concerned about performance, you can
use a crossover cable with the 10/100MB ethernet cards to do full-duplex
100 between cards. That should help performance.
