Is there a way around the 1GB File size limitation on Ext2? I'm pulling
a bunch of stuff of a tape from a mainframe, and the files are about
3GB in size.

As someone else has mentioned, it's a 2GB file size limitation. I
recently sent patches to Linus to allow for larger file sizes on 64-bit
machines, and all goes well 2.1.91 will support large files. (So I
expect that Linux 2.2 should support large files, at least on 64-bit
platforms.)

Support for large files on 32-bit machines (i.e., i386, et. al) will
have to wait for someone willing to do some VM hacking....
