[PATCH 18/34] docs: driver-api: gpio: using-gpio.rst: avoid using ReSt :doc:`foo` markup

The :doc:`foo` tag is auto-generated via automarkup.py.
So, use the filename at the sources, instead of :doc:`foo`.
