[PATCH] drivers/iio: Remove all strcpy() uses in favor of strscpy()

strcpy() performs no bounds checking on the destination buffer. This
could result in linear overflows beyond the end of the buffer, leading
to all kinds of misbehaviors. The safe replacement is strscpy().
